The Okinawan liquor awamori, or sake in the local dialect, has a history that goes back 500 years. It is believed to have come from Thailand in the 15th century, and thus is similar in taste and aroma to lao lan, a liquor produced in that country. Awamori, a transparent, distilled liquor, is made from rice using black malt befitting the subtropical climate. Although it is mild in taste, the awamori is a strong liquor that contains 20 to 60 percent alcohol.
