Rafute
(Pig of boiled with soy sauce)

Simmered pork cubes Okinawa-style, cooked with soy sauce and awamori until soft enough to break with chopsticks.
INGREDIENTS: HOW TO COOK
Rafutei
(3 servings)

1.2 kg pork belly, including skin
3-4 cup dashi-bonito(fish) flake soup stock
1 or 1 and 1/2 cup awamori (Okinawa Rice
Brandy)
1/2 cup sugar
1/2 cup soy sauce
thin silvers of ginger to taste
1. Wash pork with hot water. Boil pork in a pot for 50 minutes.

2. Cut pork into 7 cm by 2 cm pieces, or 3-4 cm by 3-4 cm chunks.

3. In another pot, simmer pork with dashi and awamori. Add sugar after a while.

4. Add soy sauce two separate times, adding half the amount each time.

5. Simmer ingredients in high heat for 5 minutes. Cook in low heat for about an hour until pork is tender. (tender enough so that you can tear the meat by chopsticks.) Serve with boiled vegetables, pour some sauce on top.
